Project HACCP
Project of integrated prevention againts pest HACCP is a systematic way of analyses possible hazard under process manifacturing foodstuff, identification locations (of the process), where is possible appearance hazard and decisions, which from these places are critical considering to safeness consumer.
Program HACCP:
- analyse potential hazards and appreciation its consequensions and hazard for food in process operation;
- identification locations in these operations, where can be possible risk for food;
- decision, which from identification locations (of the process) are critical for safeness food - "critical points";
- realization useful protecting and monitoring measures in these critical points;
- observations risk for food, critical points, protecting and monitoring process periodically and any time when manufacturing process change.
